Technical details

Grapes: 100% Falanghina.

Production area: Castelvenere (BN).

Cultivation method: espalier, with Guyot training system.

Soil characteristics: medium texture with tufaceous subsoil.

Yield per hectare: 80 q.

Harvest: manual in small crates.

Vinification: destemming, soft pressing, cold static decantation and fermentation at a controlled temperature of around 13°.

Aging: refermentation in autoclave with selected yeasts and at controlled temperatures.

Alcoholic strength: 11% Vol.

Residual sugar: 90g/lt.

Organoleptic characteristics

Color: bright straw yellow.

Perlage: fine, silky and persistent.

Nose: notes of white flowers, peaches and citrus fruits.

Taste: pleasantly sweet, fresh and delicate.

Service

Serving temperature: 6°-8°.

Tasting: Extraordinary pairing with desserts and creamy cakes. It is an excellent sparkling wine for toasting.

VINEYARDS

Our vineyards are cared for and cultivated with methods that respect the harmonious balance between man and the environment, enhancing the delicate relationship between all the components involved. They extend over an area of ​​approximately 25 hectares in the heart of Sannio Beneventano, in an area called "Vignole", which gives its name to the company.

HARVEST

The harvest, which takes place from the end of August to the end of October, varies depending on the grape varieties. During this period, not only the permanent collaborators, but also young local workers participate in the harvest, which always takes place in an atmosphere of joyful celebration. Every phase of the manufacturing process is still conducted and followed by the tireless founder, grandfather Gino.
